Abessis carried out the full renovation of a Domino’s Pizza restaurant of 120 m² in Mexico City (Calzada Legaria 252, Local 2, Col. Pensil Norte), ensuring the operational continuity of the business throughout the entire project. The main challenge was coordinating the work in night shifts, leaving the restaurant perfectly clean, safe, and operational each day to reopen to the public first thing in the morning.

To achieve this, we organized a phased schedule with daily milestones, integrating all trades (civil work, MEP installations, finishes, and signage) under a meticulous planning and protocols for dust, noise, and waste control. This methodology allowed us to work in critical areas (hot kitchen, ovens, cold rooms, serving counter, and back-of-house areas) without interfering with service.

The scope included facility adjustments (electrical, HVAC, air extraction and renewal in the kitchen, plumbing, and drainage), improvement of high-resistance and easy-to-clean coatings, updating of lighting and hygienic finishes on preparation surfaces, as well as optimizing flows between production, plating, pick-up, and delivery. We reviewed and integrated specific equipment (ovens, cold tables, dishwashers, hoods, and filters) focusing on efficiency and maintenance requirements.

We worked under Domino’s brand standards and in coordination with approved suppliers to ensure brand consistency, readability of the point of sale, and an agile customer experience in both in-store consumption and pick-up and delivery. All of this was in compliance with local regulations on safety, fire protection, and sanitary conditions for the restaurant sector.

The result is a renewed, functional, and robust space, prepared for high operational volumes and with optimized service times. This project consolidates Abessis’ ability to work on active locations, managing nighttime projects with high coordination and delivering quality finishes without compromising daily operations.
